Boozy Baking: Almond Amaretto Cookies
There’s nothing quite like waking up to a fresh dusting of snow is there? That’s what happened this morning in Toronto, Ontario. To top it all off it’s Friday, and Christmas is just TWELVE days away. Yeah. Freaky, but great.
Last weekend we were in true Christmas spirit and went a little crazy with our boozy adventures. The people were nestled all snug in their beds, while two Tipsy Teachers raided the liquor cabinet. From spiking cookies to hot chocolate- we tried it all!
Today we’re presenting you with the ultimate Christmas treat: Almond Amaretto Cookies with a Chocolate Amaretto Glaze. Sounds boozy right? Yeah, it is. But we guess the great thing about boozy baking is that the alcohol will evaporate, leaving you with tasty goodness, minus the hangover (remember this process? It’s called Burn-Off). Plus you’ll will brownie points when strolling into the work with “boozy” cookies. You’ll be the Holiday Office Hero!
Almond Amaretto Cookies
with a Chocolate Amaretto Glaze
For the Cookies
1 ¾ cup flour
Pinch of Salt
½ cup sugar
½ cup crushed almonds
½ cup butter (softened)
1 oz Amaretto
For the Glaze
1 oz milk chocolate
1 tsp Amaretto
1 Stainless Steel Mixing Bowl
1 Mixing Bowl
1 Cookie Tray
1 Mixmaster/Kitchenaid/Whisk/Fork/Or just your hands
Ok, tell me how it’s done!
Set the oven to 400°F.
Start with the wet ingredients. Cream the butter and sugar until fluffy and light in colour. Add the egg and Amaretto and stir, being careful not to over mix.
Now let’s do the dry ingredients. In a separate bowl, combine the flour, salt, and crushed almonds.
Mix it together. Add the dry ingredients to the wet, one spoonful at a time. After a certain point the dough will become very thick and you’ll have to roll up those sleeves and use your hands.
Roll out! Once the dough has formed into a firm ball, flour a clean surface and roll out your dough. We like our cookies on the thinner side so we rolled ours out to about 3/4″.
Use the cookie cutters to cut out shapes. Arrange the shapes on a greased baking tray and toss it in the oven for 11 mins.
Meanwhile… Make the glaze! Place a pot of water on to boil. When the water is simmering, rest a steel mixing bowl on the rim.Put your chocolate in the steel mixing bowl and allow it to melt slowly. Add the Amaretto and stir.
Decorate! Once the cookies are done and cool, drizzle them in your Amaretto glaze.
